High Protein Soy Bread Recipe

Ingredients

  • 3 c. soy lowfat milk scalded
  • 2 pkt dry yeast
  • 1/4 c. oil
  • 1 Tbsp. salt
  • 2 Tbsp. honey
  • 7 c. unbleached white flour
  • 2 c. soy flour oil

Directions

  1. (2 Loaves)
  2. Scald the soy lowfat milk and then cold to hot. Sprinkle over the lukewarm soy lowfat milk the yeast, oil, salt, and honey and let sit for 10 min till the yeast foams.
  3. Beat in 4 c. of the white flour and then the soy flour. Knead in the remaining 3 c. of white flour, turn out onto a lightly floured surface and knead for 10 min or possibly till the dough is smooth and elastic.
  4. Place in a greased bowl and let rise, covered, till the dough doubles in size. Punch down and shape into 2 loaves. Place in 2 well-greased, 9 x 5-inch loaf pans, brush tops with oil, cover and place in a hot spot to rise to double.
  5. Bake at 350 F. for about 45 min or possibly till golden.
  6. Cold on wire racks.
