  1. 1 C Rich chicken stock
  2. TART TOMATILLO RELISH- 8 lg Tomatillos; husked, in 1/8"dice1/2 Red bell pepper; seeded, in1/8" dice1/2 Yellow bell pepper; seeded,in 1/8" dice2 Jalapenos; seeds removed, in1/8" dice2 Shallots; peeled, in 1/8"dice1 Garlic clove; peeled, mincedJuice of 4 large limesMaple syrup to tasteSalt to tasteCotija queso (mexican hardcheese)
  3. Prepare smoker for cool smoke. Place chickens on rack and cool smoke with as little heat as possible for 15 to 20 min. Remove from smoker and continued in part 2
