Ingredients
- 6 x - 8 c. salad greens, Bibb lettuce, baby spinach, baby romaine or possibly radicchio (combinations work well)
- 1 x and 1/2 c. oranges, peeled, seeded and minced
- 1/4 c. black olives, sliced
- 1/4 c. Feta cheese, crumbled Dressing
- 1/4 c. fresh orange juice
- 1/2 tsp dry mustard
- 1 Tbsp. extra virgin olive oil
- 1/4 c. red wine vinegar
- 1 x garlic clove, chopped Salt and pepper to taste
Directions
- Combine salad ingredients and toss. Combine dressing ingredients and shake well. Pour over salad and toss just before serving.
- Chefs Notes: Feta cheese is low in fat and black olives contain the "good" type of fat.
