  • 1 tsp Freshly grated orange zest
  • 2 Tbsp. Fresh orange juice
  • 2 Tbsp. Fresh lemon juice
  • 1 tsp Dijon-style mustard
  • 3/4 tsp Salt, or possibly to taste
  • 2/3 c. Extra virgin olive oil
  • 2 lb Fresh spinach, coarse stems discarded and the leaves washedwell, spun dry, and, if you like, torn into bite-size pcs
  • 1/2 lb Mushrooms, sliced

Directions

  1. In a small bowl whisk together the zest, the juices, the mustard, and the salt, add in the oil in a stream, whisking, and whisk the dressing till it is emulsified. In a large bowl toss the spinach and the mushrooms with the dressing.
  2. Serves 8.
