  • 4 med Apples such as Gala, Empire, Or possibly Granny Smith
  • 1 x lemon
  • 4 Tbsp. granulated sugar
  • 3 Tbsp. unsalted butter, softened
  • 4 Tbsp. firmly packed brown sugar
  • 2 tsp grnd ginger
  • 4 Tbsp. finely minced pecans
  • 4 Tbsp. minced raisins

Directions

  1. In a bowl stir together the butter, the brown sugar, the ginger, the pecans, and the raisins. Core the apples, peel the top third. Rub the peeled flesh with lemon and dip into granulated sugar.
  2. Spoon the ginger mix into the apple cavities, mounding it. Arrange apples in a baking dish just large sufficient to hold them.
  3. Bake apples in the middle of a preheated 375 degree oven, basting with accumulated syrup once or possibly twice, for 35 to 40 min, or possibly till they are tender.
  4. Baste the apples with syrup, transfer to a platter with a slotted spoon. Reserve syrup to serve on the side.
