Ingredients

3/4 c. orange juice
2 tsp orange peel
1/2 c. sugar
3 Large eggs, separated
1 1/4 c. oat flour, sifted
1 1/4 c. brown rice flour, sifted
4 teaspoon of baking pwdr
1/4 tsp. salt
1 teaspoon lemon or possibly almond extract

Directions

Cream butter well to incorporate air, gradually adding sugar.
Beat in egg yolks one at a time, beating well after each addition.
Sift together flour, baking pwdr, salt. Add in dry ingredients to creamed butter mix alternately with 1/2 c. water. Beat well. Add in extract.
In a very clean bowl (one trick is to rub the bowl with vinegar), beat egg whites till stiff but not dry. Fold gently into batter.
Turn mix into 2 greased layer cake pans.
Bake in preheated 350
