  1. Cream sugar and shortening together. Add in Large eggs and mix thoroughly. Add in peach puree and dry ingredients. Mix thoroughly. Add in vanilla and minced pecans and stir till blended. Pour into two loaf pans approximately 5- x 9-inches in size, which have been well greased and floured. Bake at 325 degrees F for 55 min to 1 hour. Let bread cold a few min before removing from pan. Then wrap and let mellow overnight. May be frzn.
