Ingredients

  • 1 box yellow cake mix
  • 1 sm Box vanilla instant pudding
  • 2/3 c. Oil
  • 4 x Large eggs
  • 1 1/2 c. Fruit only...no juice
  • 1 c. Nuts- pecans are best

Directions

  1. Don't Chill...USE ONLY WOODEN UTENSILS...STORE IN COVERED CONTAINER
  2. FIRST DAY: In large bowl combine 1 1/2 c. starter juice, 2 1/2 c. sugar, 1 large can sliced peaches, liquid removed and diced.
  3. STIR DAILY FOR 10 DAYS
  4. TENTH DAY: add in 2 1/2 c. sugar, 1 large can chunk pinapple with juice
  5. STIR DAILY FOR 10 DAYS
  6. 20TH DAY: Add in 2 9oz. jars marashino cherries liquid removed and diced...I use both Red and green ones
  7. STIR DAILY FOR 10 DAYS
  8. 30TH DAY: Drain fruit- save liquid- you will have sufficient for yourself and 2 Friends (1 1/2 c. each).
  9. You are ready to bake 3 -cakes.
  10. The contributor added: Mix all ingredients and bake in a greased bundt pan 300* for 1 hour. I serve it plain as after it cools I usually pour about 1-1 1/2 ounce of rum over it to add in flavor.....very good!

    I have made a 30 day cake, but I always used all the juices. Good idea to leave out discoloring or extra sweet juices. Why don't you save the rum and stick with the original, the starter you just saved. Thanks for the hint, though. I will try to pour some of the starter over the adult portions of my next cake.
    I have also tried to just use the cake mix with the pudding already in it and omitted the instant pudding mix, which came out very nicely, too. Sometimes it is hard to find the plain cake mix without pudding. We mostly shop at Aldi's and they seem to only have it with puddling already in it.
    Next time I will surely try to omit some of the juices. Thanks.
