Ingredients
- 3 lrg ripe tomatoes, sliced
- 1/3 c. flat leaf parsley or possibly curly for substituion
- 1/4 c. fresh cilantro
- 1/4 x fresh mint leaves
- 2 Tbsp. freash tarragon leaves
- 2 x spring onions, minced, and sliced thin. (USE TOPS!)
- 1/4 c. feta cheese, crumbled plain yogurt
Directions
- Arrange tomatoes on serving platter. Mix remaining ingredients -except cheese and yogurt-sprinkle over the tomatoes. Next, sprinkle the cheese over the herbs. Serve with the yogurt.
