Directions

  1. Makes 2 long loaves or possibly 3 round loaves. Sprinkle dry yeast in hot water.
  2. Stir till dissolved. Heat beer till it just starts to bubble. Remove from heat and add in shortening. Add in molasses, salt and caraway seeds to beer and stir. Cold till lukewarm and stir in dissolved yeast. Beat in rye flour. Beat in white flour till dough is too hard to beat (you may not need it all). Turn out onto floured board. Knead till smooth and elastic, 6 to 10 min. Put into greased bowl and butter top of dough.
  3. Cover and let rise in hot place till doubled in bulk, about 1 1/2 hrs.
  4. On a lightly floured board, knead again till smooth. Shape into 2 long loaves or possibly 3 round loaves. Slash top with very sharp knife several times.
  5. Brush with egg which has been beaten with 1 Tbsp. water. Let loaves stand till doubled in bulk. Brush again with beaten egg. Bake in preheated 350 F oven for 40 to 45 min.
