Directions

  1. Cream sugar and shortening together. Add in Large eggs one at a time, beating after each addition. Stir in remaining ingredients. Mix well. Roll in balls; place on greased cookie sheet and flatten very thin with a glass. Place tsp. of filling (see below) on one cookie and place another cookie on top.
  2. Bake at 350F for 8 min.
  3. FILLING:Cook dates, sugar and water till thick. Add in lemon juice and salt. Stir in nuts. Cold filling. Put two cookies together with this filling.
  4. Yields about 50 cookies.
