  • 1 (#2) can cream style corn
  • 2 T sugar
  • 2 c. flour
  • 2 large eggs
  • 1 1/4 teaspoon salt
  • 4 teaspoon baking pwdr
  • Shortening for frying

Directions

  1. Heat shortening to 360 degrees. Beat together corn, large eggs, and sugar. Sift together the flour and baking pwdr. Stir into the corn mix, mixing sufficient to moisten flour. Drop by tablespoonful into the hot shortening. (Keep temperature between 350-360 degrees.) Fry about 6 min, turning once. Drain on paper towels.If you like, put powdered sugar in a brown paper bag; shake fritters to coat with powdered sugar.
