A yummy potato salad recipe I came up with utilizing Durkee's Famous Sauce.

I wish I could figure out the recipe for Durkee's, as it's expensive, and I love the stuff.

Prep time: 10 minutes

Cook time: 30 minutes

Servings: 6

Ingredients

2 lbs. red potatoes, cooked, quartered
2 eggs, hard-boiled
3/4 cup mayonnaise
1/4 cup Durkee's
3-4 chopped scallions
1 tbs. Dijon mustard
1 tbs. chopped red bell pepper
1/4 tsp. celery seed
1/2 tsp. seasoned salt
1/4 tsp. pepper
dash Tabasco
garnish: chopped parsley or paprika

Directions

Cook potatoes until tender
Cool and cut in quarters.
Boil eggs, chop.
Combine other ingredients in a bowl and toss the potatoes and eggs with the mayo mixture.
Garnish.
Refrigerate several hours before serving.

  Durkee Famous Sauce is a tangy mustard sauce created in the late 1800s. It's hard to find in some areas, but you can go to Durkee.com and see if there is a store that stocks it nearby you. If not available, I'll be happy to exchange something of equal value and send you a jar.
