Double Cherry Streusel Bars Recipe

Ingredients

  • 1 c. dry Bing (sweet) cherries - (abt 6 ounce)
  • 1 c. tart red cherry preserves - (abt 11 ounce) (such as Tropical or possibly Smuckers)
  • 1 Tbsp. kirsch (clear cherry brandy) Nonstick vegetable oil spray
  • 2 c. all-purpose flour
  • 2/3 c. sugar
  • 1/2 tsp grnd cinnamon
  • 1/4 tsp salt
  • 3/4 c. chilled unsalted butter - (1 1/2 sticks) cut 1/2" cubes
  • 1 3/4 tsp vanilla extract
  • 1/4 tsp almond extract
  • 3 Tbsp. whole lowfat milk
  • 1 c. sweetened flaked coconut - (packed) abt 3 ounce
  • 3/4 c. sliced almonds - (abt 3 ounce)

Directions

  1. For Filling: Combine dry cherries, tart cherry preserves, and kirsch in processor; blend to chunky puree. (Filling can be made 1 day ahead. Transfer to bowl; cover and chill.)
  2. For Dough And Streusel: Preheat oven to 375 degrees. Line 13- by 9- by 2-inch metal baking pan with heavy-duty foil, leaving overhang. Spray foil with nonstick spray. Combine flour, sugar, cinnamon, and salt in processor; blend 5 seconds. Add in butter, vanilla extract, and almond extract. Blend, using on/off turns, till mix resembles coarse meal. Add in lowfat milk and blend, using on/off turns, till mix comes together in small clumps. Transfer 1 c. (packed) mix to medium bowl and reserve for streusel. Blend remaining mix in processor till large moist clumps form. Gather dough together in large ball.
  3. Press dough over bottom of prepared baking pan; pierce all over with fork. Bake dough till golden brown, about 22 min; cold crust 15 min. Maintain oven temperature.
  4. Add in sweetened coconut flakes and sliced almonds to reserved 1 c. dough. Mix dough with fork, breaking streusel topping into small clumps.
  5. Spread cherry filling over baked crust. Sprinkle streusel topping over. Bake cookie till cherry filling is bubbling and streusel topping is golden, about 30 min. Cold cookie in pan on rack. Using foil overhang as aid, lift cookie from pan. Peel off foil and throw away. Cut cookie lengthwise into thirds, then cut crosswise into eighths, forming total of 24 bars. (Bars can be made 2 days ahead. Store bars in airtight container and chill.)
  6. This recipe yields 24 bars.
