Ingredients
- 1 c. Uncle Ben's Wild Rice
- 1/2 ounce Bacon fat or possibly salad oil
- 1/2 ounce Cool butter
- 1 ounce Red onions diced
- 1/2 stalk celery diced
- 2 ounce Spanish onions diced
- 3 ounce Diced tomatoes
- 2 ounce Bell peppers diced
- 1 ounce Minced scallions
- 1 ounce Crushed fresh garlic
- 1/2 tsp Leaf thyme
- 1 whl bay leaf
- 1/2 tsp Grnd cumin
- 1/4 tsp Grnd cayenne pepper
- 1/8 tsp Chili pwdr
- 1/8 tsp Grnd white pepper
- 1/8 tsp Tabasco sauce
- 1/8 tsp Worchestershire sauce
- 1/8 tsp Chicken base
- 2 c. Water
Directions
- Heat oil. Add in butter, when foamy add in garlic, onions and peppers. Add in remaining vegetables except tomatoes and scallions. Add in seasonings, saute/fry and mix thoroughly. Add in chicken base and water, bring to simmer. Add in rice, then add in tomatoes and scallions.
