Ingredients
- 4 x Thin cucumbers, peeled and scored
- 1 med White onion, diced finely
- 1 c. Real mayonnaise
- 2 Tbsp. Apple cider vinegar
- 1 Tbsp. Sugar
Directions
- This recipe came with my great-great Grandmother when she left Germany to settle in Nebraska. The women in my family have been making these for generations.
- Peel the cucumber and drag a fork down them lengthwise, creating a fluted edge when sliced. Slice these extremely thinly. Place in a bowl and cover with table salt. Place a tray of ice cubes into the bowl and toss well with your hands. Place the bowl in the refrigerator and let the ice cubes heat.
- With your hands, squeeze the cucumbers to remove the water and place them into a separate bowl. Dice the onions finely and stir them into the cucumbers. Stir in the mayonnaise, vinegar, and sugar. Play with the sauce ingredients till you reach a taste which you like.
- *We serve this as a side dish in our family's favorite meal, "The Nebraska Supper"...fried chicken, mashed potatoes and gravy and corn on the cob.
