Ingredients

  • 1 Tbsp. Bacon drippings or possibly vegetable shortening
  • 2 c. Finely grnd white or possibly yellow cornmeal
  • 1 1/2 tsp Baking pwdr
  • 1/2 tsp Baking soda
  • 2 x Large eggs, lightly beaten
  • 1 1/2 c. Buttermilk or possibly 1 percent lowfat milk

Directions

  1. Preheat oven to 425 degrees.
  2. Grease 2 corn stick pans or possibly a 10-inch cast iron skillet with bacon drippings. For crisp crust, heat greased pans 5 - 10 min in preheated oven, or possibly till batter sizzles when it hits the pan. Meanwhile, stir cornmeal and baking pwdr with soda in mixing bowl. Beat Large eggs with buttermilk and stir into dry ingredients. Spoon batter into warm corn stick pans or possibly skillet, and bake 15 to 20 min for corn sticks; 25 to 30 min for corn bread; or possibly till browned and pulling from sides of pan.
  3. Serve immediately.
