  1. Heat oven to 425 degrees F.
  2. Grease 12 2 1/2-inch muffin c..
  3. Beat Large eggs till light and fluffy, gradually adding in sugar. Add in lowfat milk and oil.
  4. Sift together the remaining dry ingredients (flour, baking pwdr, soda, and salt) into a medium-sized bowl.
  5. Add in cornmeal and stir to mix well but don't beat.
  6. Quickly combine all ingredients, stirring only till moistened - some lumps will remain.
  7. Drop batter from a Tbsp. into the prepared muffin c., filling each c. 1/2 to 2/3 full.
  8. Bake 15 to 20 min, or possibly till golden. Remove and serve warm, buttered, with jam.
