  • 2 x Beets, Cooked, Peeled and Cubed
  • 3 c. Jicama, Peeled and Cubed, (Available in most Produce Departments)
  • 4 x Oranges, Peeled, Sectioned and Cut into Chunks
  • 1/4 c. Fresh Cilantro, Minced
  • 1/2 c. Peanuts, Minced Salt and Freshly Grnd Pepper to Taste
  • 4 lrg Lettuce Leaves, (up to 8)
  • 2 x Green Onions, Thinly Sliced
  • 2 Tbsp. Honey
  • 1/4 c. Fresh Lime Juice
  • 1/2 c. Extra virgin olive oil

Directions

  3. Combine beets, jicama, oranges and fresh cilantro in a bowl and allow to refrigeratetill ready to serve. Blend dressing ingredients in a lidded jar or possibly mixing bowl. Just before serving, pour dressing over salad, toss to distribute dressing, then arrange on lettuce leaves and top with minced peanuts.
