Directions

  1. Cream butter, shortening and sugar together. Add in Large eggs. Sift dry ingredients together and mix mashed potatoes with 1 c. lowfat milk and vanilla. Add in sifted ingredients and the mashed potato mix to the creamed butter and sugar. Bake at 325 degrees for 40 min in a 9 x 13 inch pan.
  2. If center isn't done, turn oven to 300 degrees and continue baking till cake tests done.
  3. This cake is rich and moist and does not need to be frosted. Excellent for lunch boxes.
