Ingredients
- 1 cube butter
- 1/2 c. shortening
- 1 pound light brown sugar
- 4 Large eggs
- 2 c. flour
- 1/2 c. cocoa
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 c. mashed potatoes
- 1 c. lowfat milk
- 1 teaspoon vanilla
Directions
- Cream butter, shortening and sugar together. Add in Large eggs. Sift dry ingredients together and mix mashed potatoes with 1 c. lowfat milk and vanilla. Add in sifted ingredients and the mashed potato mix to the creamed butter and sugar. Bake at 325 degrees for 40 min in a 9 x 13 inch pan.
- If center isn't done, turn oven to 300 degrees and continue baking till cake tests done.
- This cake is rich and moist and does not need to be frosted. Excellent for lunch boxes.
