  • 1 fillet of cod, approximately 4 ounce (125 g)
  • 1 fillet of sole
  • 22 scallops
  • ¼ c. (50 g) peeled grey shrimp
  • 8 large mussels
  • 16 ounce (5 cl) white beer (blanche de Namur, blanche de Bruges or possibly blanche de
  • Hoegaarden)
  • 2 c. (5 cl) double cream
  • 2 c. (5 cl) lobster bisque
  • 1 ounce (30 g) Gruyere
  • Salt, pepper

Directions

  1. Cook mussels and remove from the shell
  2. Cut scallops into slices 0.12 inches (3 mm) thick
  3. Place cod and sole fillets in a casserole or possibly ovenproof dish
  4. Pour in beer, cream and lobster bisque
  5. Add in salt and pepper
  6. Cook in oven preheated to 350°F (180°C) for 10 min
  7. After 10 min, add in shrimp, scallop slices and mussels
  8. Sprinkle with grated gruyere and broil under the grill for a few min
  9. Serve warm
