Ingredients
- 6 chicken breasts or possibly 1 whole chicken
- 1 lg. pkg. tortilla chips
- 1 can cream of chicken soup
- 1 soup can lowfat milk
- 2 cans Rotel tomatoes, diced with green chilies
- 1 1/2-2 lbs. Velveeta cheese
Directions
- Cook chicken, remove skin and bone, dice. Cut Velveeta into small pcs. In large microwave bowl combine cheese, soup, Rotel and lowfat milk - microwave on High till cheese is melted - stir every 4-5 min. Place chips in 13 x 9 inch baking dish, cover with diced chicken and pour cheese mix over proportionately. Heat in 325 degree oven for 30 min.
