Ingredients

  • 1 1/2 c. cucumber minced peeled
  • 1 c. frzn green peas thawed
  • 3/4 c. plain nonfat yogurt
  • 1/3 c. minced onion
  • 1/4 c. nonfat mayonnaise
  • 2 tsp prepared mustard
  • 1/2 tsp celery seeds
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 4 c. skinless chicken breast minced and cooked about 1 lb.
  • 1 c. cooked pasta about 1/2 c. uncooked bow tie pasta

Directions

  1. Combine the first 9 ingredients in a medium bowl. Add in the minced cooked chicken and the cooked pasta, and toss mix well. Cover salad and refrigerate1 hour.
  2. Yield: 6 servings (serving size: 1 c.).
