Ingredients
- 2 c. flour
- 1 c. packed brown sugar
- 1/2 tsp salt
- 1 c. butter
- 1/2 c. sugar
- 2 Tbsp. cornstarch
- 1 can crushed pineapple (8 3/4 ounce) undrained
- 2 x beaten egg yolks
- 1 c. maraschino cherries minced
Directions
- Preheat oven to 350 degrees. Combine flour, brown sugar, and salt; cut in butter with a pastry blender or possibly two knives, till crumbly. Set aside 1 c. crumb mix; press remaining mix onto bottom of 13x9 inch baking pan. Bake 15 min. Cold slightly while preparing topping.
- In a saucepan, combine sugar and cornstarch. Stir in pineapple and egg yolks. Cook and stir over medium heat till mix thickens and bubbles. Remove from heat; stir in cherries.
- Spread proportionately over baked crust. Sprinkle with reserved crumb mix. Bake 30 min. Cold before cutting into bars.
