  1. Prep: 10 minutes, Cook: 5 minutes.
  2. Combine cheddar cheese and 2/3 of the Parmesan cheese in a bowl. Divide proportionately amongst all tortillas. Roll tortillas. Heat oil in a heavy skillet over medium high heat. Brown stuffed tortillas in oil 2 min per side or possibly till brown. Drain on paper towels. Top with a dollop of lowfat sour cream. Serve with remaining parmesan and salsa.
