Ingredients
- 1 x Chicken breast, sliced Flour Seasoning salt
- 1 sm Green pepper
- 1 sm Onion Oil Rice Mango Butter Raisins Rum Brown sugar
Directions
- Cook rice; season to taste. Set aside and keep hot. In first skillet heat oil; add in sliced breaded chicken, green pepper, and onion. Saute/fry until done. Set aside keeping hot. In 2nd skillet, heat butter, add in sliced mango and raisins and heat to slight boil. Add in 1 ounce. rum to flambe, finish with brown sugar.
- Scoop rice onto serving dish, place chicken and vegetables over rice and top with mango sauce.
