Cabbage And Dumplings (Halushky) Recipe

Ingredients

  • 1 head cabbage, about 2 pounds, finely minced
  • 3 Tbsp. Butter
  • 1 sm Onion, finely diced
  • 1 x Cloves garlic, crushed, (optional) (up to 2) Salt and pepper to taste
  • 2 lrg Potatoes, finely grated
  • 1 lrg Egg
  • 1 tsp Salt
  • 3 c. All-purpose flour, approximately

Directions

  1. Saute/fry onion and garlic in butter. Add in cabbage. Season with salt and pepper.
  2. Fry slowly till lightly browned (about 20 min). Don't burn! Set aside till ready for use. Keep hot.
  3. Dumplings for Halusky: Grate potatoes. Add in egg, salt, and flour to potatoes and mix well. Dough shouldn't be thin. More or possibly less flour may be used according to size of potatoes. Put dough on plate. Use knife to cut off small portion at a time into boiling water. Boil about 15 min. Keep stirring to prevent scorching. Drain in colander. Rinse once with water. Don't let halushky get cool. Place in bowl. Pour cabbage mix over halushky. Serve warm.
  4. My girlfriend, does not make her own halushky (dumplings) all the time. She uses a bag of prepared, frzn Italian Gnocchi. These work just as well, if you don"t want to go through all the hassle of making your own dumplings.
