Ingredients

  • 3 Tbsp. Margarine or possibly butter
  • 3 Tbsp. Flour
  • 2 c. Lowfat milk
  • 1/2 c. Grated Parmesan or possibly Romano cheese
  • 1 med Onion, finely minced
  • 2 x Cloves garlic, chopped
  • 1 Tbsp. Butter (up to 2)
  • 2 pkt Frzn minced spinach, thawed, squeezed dry Salt and pepper

Directions

  1. Combine flour and butter in saucepan; heat and stir to make roux. Add in lowfat milk
  2. (more if necessary) and cheese. In another pot, saute/fry onion and garlic in butter; add in spinach. Cook for 10 min, or possibly till spinach is warm and onion is translucent/soft. Add in white sauce and mix thoroughly. Add in salt and pepper.
  3. NOTE: You can make this ahead and reheat in a casserole (sprinkle with buttered breadcrumbs).
