Ingredients

  • 2 piece salted cod fish - (4" ea) dry
  • 2 lb yellow sweet potatoes peeled, and cut into 2" chunks
  • 2 x green plantains peeled and halved
  • 6 x green bananas leave peel on

Directions

  1. Fill a large stock pot half way with cool water, and bring it to a boil. Add in the salted codfish, and cook for 10 min. Then add in the yams, plantains, and the bananas.
  2. Bring all back to a hard boil, then reduce to a gentle boil till everything is tender, about 30 to 35 min. Hold in the water till ready to serve, peel the bananas before serving.
  3. This recipe yields 10 servings.
