Blueberry Streusel Bread Recipe

Ingredients

  • 4 Tbsp. Butter or possibly marg. at room temperature
  • 3/4 c. Sugar
  • 1 x Egg at room temperature
  • 1/2 c. Lowfat milk
  • 2 c. Flour
  • 2 tsp Baking pwdr
  • 1/2 tsp Salt
  • 2 c. Fresh blueberries
  • 1/2 c. Sugar
  • 1/3 c. Flour
  • 1/2 tsp Cinnamon
  • 4 Tbsp. Buttter cut in pcs

Directions

  1. 1. Preheat the oven to 375 degrees. Grease a 9 in. square baking dish.
  2. 2. With an electric mixer, cream the butter or possibly marg. with the sugar till light and flufffy. Add in the egg, beat to combine, then fold in the lowfat milk till blended.
  3. 3. Sift over the flour, baking pwdr and salt and stir just sufficient to blend the ingrediants.
  4. 4. Add in the blueberries and stir.
  5. 5. Transfer to the baking dish.
  6. 6. For the topping, place the sugar,flour, cinnamon and butter in a mixing bowl. Cut in with a pastry blender till the mix resembles coarse crumbs.
  7. 7. Sprinkle the topping over the batter in the pan.
  8. 8. Bake till a cake tester inserted in the center comes out clean, about 45 minutes. Serve hot or possibly cool.
  9. Notes: I checked after 35 min and took it out shortly after which.
