Ingredients
- 1 c. minced pecans
- 1 1/4 c. salad oil
- 4 x Large eggs
- 2 c. sugar
- 2 tsp salt
- 3 c. sliced carrots
- 2 c. flour, sifted
- 1 tsp baking soda
- 2 tsp baking pwdr
Directions
- Chop pecans in blender to a fine texture, set aside.
- Place salad oil, Large eggs, sugar, salt in blender container and blend for 5 seconds. Add in carrots gradually and blend till just grated.
- In a large mixing bowl, sift togeter flour, baking soda and baking pwdr.
- Pour the contents of the blender over the dry ingredients. Mix well with an electric mixer. Stir in the finely minced pecans pour into greased tube pan. Bake at 325 degrees about 1 hour and 10 min.
