Ingredients

  • 2 c. unbleached all purpose flour
  • 1 c. whole wheat flour
  • 1 c. oat flour
  • 1 to 3 Tbsp. sweetener* (to taste)
  • 2 Tbsp. baking pwdr
  • 1 tsp. xanthan gum (optional)
  • 1 16 oz can of quality (room temperature) beer

Directions

  1. Thoroughly mix dry ingredients in a large bowl. Make a hollow in the center and add in beer. Stir only till dry ingredients are moistened. Batter should be lumpy.
  2. Pour into a 9 x 5 loaf pan and bake at 375
