Ingredients

  • 1 x young Emu hen Green Boughs Mallee Roots

Directions

  1. Prepare a good sized hole in the grnd filled with white ash and coals.
  2. Take young hen - stretch neck.
  3. Remove some feathers for decoration.
  4. Place hen on coals and cover with green boughs.
  5. Cook till all feathers are gone and skin is golden.
  6. Rub with Mallee Roots to remove quills.
  7. Tip
  8. Serve to old men and dogs, then the women and kids.
