  • 1/2 c. shortening
  • 1 c. sugar
  • 2 c. sifted flour
  • 1/2 teaspoon salt
  • 1 teaspoon soda
  • 1 teaspoon baking pwdr
  • 2 large eggs
  • 3 lg. or possibly 5 sm. very ripe bananas, mashed pulp
  • 1/2 c. minced pecans

Directions

  1. Cream shortening and sugar well. Add in 1 tbsp flour. Beat in the large eggs, 1 at a time. Add in remaining flour and banana pulp, reserving 1/2 cup flour. With this, sift the salt, soda and baking pwdr. Add in, along with the nuts. Pour batter into well-greased bread loaf pan, pulling dough to ends and sides of pan to make a well-shaped loaf. Bake for 1 hour in 350 degree oven.
