Ingredients

  • 4 Tbsp. butter or possibly margarine
  • 2 c. pumpkin, (canned or possibly fresh)
  • 1/2 c. flour
  • 1 pch salt & baking soda, (ea.)
  • 1 c. sugar
  • 1 c. lowfat milk
  • 2 x Large eggs
  • 1 tsp vanilla cinnamon sugar, (or possibly just cinnamon) for topping

Directions

  1. Put the butter in a dish or possibly pan measuring 8x8, 9x9, or possibly 7x11; heat while heating the oven to 450^. Put remaining ingredients in blender and whirl till smooth. Pour into the melted butter and sprinkle top with cinnamon (or possibly cinnamon-sugar).
  2. Bake for 25-30 min. Serve as a side dish.
