Directions

  1. Cut aubergines into 3/4" slices. Cut apples into wedges & core.
  2. Combine fennel, salt, turmeric & cayenne in a small bowl & add in 1 tb water. Mix into a paste.
  3. Heat oil in a large skillet til lvery warm. Add in asafetida, follwed immediately by apple. Brown lightly & then remove. Add in as many aubergine slices as yuo can & brown both sides. Set aside with the apple. Do all the aubergine in this way.
  4. Return aubergine & apple to skillet & add in paste. Turn heat to low & fry gently for 10 min. Serve by placing aubergine & apple in a serving dish, leaving as much oil behind as possible.
