Here's a homemade version of my favorite Larabar - the Apple Pie Larabar.

  • 1/4 cup pitted medjool dates
  • 1/4 cup dried apple slices
  • 1/3 cup soaked and dehydrated nuts (I used 1/2 almonds and 1/2 walnuts)
  • 1/4 tsp cinnamon (I increased this from the original formula’s 1/8 tsp, purely on accident (I dumped too much in), but it tasted great)

Directions

  1. Cut out two pieces of plastic wrap for forming your bars and storing them later. Do this now, because you will be mixing with your hands at the end, and you won’t be able to get the plastic wrap out then.
  2. Place dates and apples in food processor, and chop until a paste-like consistency.
  3. Transfer dates/apples to a medium bowl.
  4. Put nuts into food processor, and chop until fine.
  5. Pour the nuts into the date/apple mixture in the bowl and mix with your hands until incorporated.
  6. Divide in half and use plastic wrap to form bars (or balls, or whatever shape you want), and then wrap in the plastic wrap and place in an airtight container in the fridge.
