Ingredients

  • 1 cup unsalted butter (two sticks)
  • 2 1/2 cup all unbleached all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup buttermilk
  • 6 to 8 tablespoons ice water
  • For the filling:
  • 3 Granny Smith apples, peeled, cored, and sliced into 1/2 inch pieces
  • 2 Gala, Pink Lady, or other baking apples, peeled, cored, and sliced into 1/2 inch pieces
  • 1/2 cup sugar
  • 1/4 cup unbleached all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 egg, beaten
