Amish Oatmeal Pancakes Recipe

Ingredients

  • 2 c. old fashioned oats
  • 2 c. buttermilk plus a bit
  • 1/2 c. flour
  • 1/2 c. whole wheat flour
  • 2 tsp sugar
  • 1 1/2 tsp baking pwdr
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 x Large eggs
  • 1/4 stk butter .melted, cooled

Directions

  1. The night before combine oatmeal and 2 c buttermilk. Cover and chill overnight. Next morning sift together the flours and sugar, baking pwdr, baking soda and salt. Set aside. In large bowl,beat the Large eggs until frothy. Add in the butter and blend, add in the oatmeal mix. Quickly blend in flour mix.
  2. The batter will be very thick so you may have to add in a few more spoons of buttermilk. Fry pancakes in electric skillet at approx. 345, using 1 tbsp batter for each cake and pat out a bit. They will puff up when turned over.
