Ingredients

  • 12 x Baking c.
  • 2 c. Raisin bran cereal
  • 1/2 c. Boiling water
  • 3/4 c. All-purpose flour
  • 3/4 c. Whole weat flour
  • 2 tsp Baking pwdr
  • 1 1/2 tsp Cinnamon
  • 1/4 tsp Salt
  • 3/4 c. Lowfat milk
  • 1/2 c. Shredded carrot
  • 1/3 c. Brown sugar
  • 1/4 c. Vegetable oil
  • 1 x Egg, beaten

Directions

  1. Preheat oven to 400*. Place baking c. in muffin pan; set aside. IN a small bowl, combine cereal and water; set aside. In a medium bowl, combine flours, baking pwdr, cinnamon and salt. Add in remaining ingredients to cereal mix; mix well. Add in cereal mix to flour mix; stir just till dry ingredients are moistened. Spoon batter into bake c., filling 3/4 full. Bake 20-25 min. Serve hot.
  2. Makes 12 muffins.
