Ingredients

  • 2 Can (540 ml/19 Fl oz) Chickpeas, drained and reserved about 2 Tbsp liquids
  • 1 (220 g) Red Onion, diced
  • 2 Cloves Garlic, chopped
  • A pinch of Sugar
  • 1 Red Chili, minced
  • ½ tsp Chili Flakes
  • 300 g Cherry Tomatoes, halved
  • 1 lemon, juiced
  • Sea Salt to taste
  • 4 Tbsp Chopped Mint Leaves
  • Freshly Ground Black Pepper
  • 2 Tbsp Olive Oil
