Tomato, Basil, And Mozzarella Salad Recipe

Ingredients

  • 1 lb large very ripe tomatoes
  • 2 ounce shredded mozzarella cheese
  • 8 x fresh basil leaves
  • 2 tsp extra virgin olive oil
  • 1 dsh freshly-cracked black pepper

Directions

  1. Slice tomatoes crosswise into 1/2-inch-thick slices, 4 slices per tomato. Arrange 2 to 3 slices on each salad plate. Sprinkle the mozzarella on top of each tomato.
  2. Cut fresh basil leaves into strips and top each tomato with basil. Drizzle extra virgin olive oil over the tops and add in a dash of pepper. Enjoy!
  3. This recipe yields 4 servings.
  4. Serving size: 2 to 3 slices tomato with topping.
  5. Comments: Make this only in the summer or possibly when you can get very large, red, rip tomatoes. (Use only 2 to 3 tomatoes here to make up the 1 lb..) It's one of our favorite summer salads and a great appetizer or possibly part of an antipasto platter.
