  • 2 lb potatoes peeled and grated
  • 1 whl red onion minced
  • 1 1/2 tsp salt
  • 1 1/8 quart Egg Beaters(r) 99% egg substitute
  • 6 ounce shredded low-fat cheddar cheese
  • 6 ounce shredded nonfat cheddar cheese
  • 6 ounce shredded low-fat mozzarella cheese
  • 6 ounce shredded nonfat mozzarella cheese
  • 2 lb Roma tomatoes peeled and sliced
  • 1/4 c. garlic pureed
  • 1 bn basil cut into long, thin
  •     strips

Directions

  1. In a large bowl combine potatoes, onions, and salt. Place in colander to release excess water.
  2. Spread the potato mix on the bottom of an 11-inch spring form pan to create a crust. Bake at 350 degrees F for 15 min.
  3. In a large bowl mix together the EggBeaters and cheese. Add in to the pan, cover with plastic wrap and aluminum foil. Bake for 30 to 40 min.
  4. Top off with tomatoes, garlic, and basil. Bake for an additional 5 min.

  6. This recipe combined fatfree with lowfat cheese.
  7. I can see this quiche topped with fresh asparagus - grilled or possibly roasted spears. As spokes with tomato slices in between.
