  • 2 pound grnd beef
  • 1 tbsp. chili pwdr
  • 2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (12 ounce.) can whole kernel corn
  • 1 sm. can ripe pitted olives
  • 1 lg. onion, minced
  • 1 c. evaporated lowfat milk
  • 1/2 c. cornmeal
  • 2 (8 ounce.) cans tomato sauce

Directions

  1. Cook meat and onion in large skillet till meat loses redness. Add in seasoning, cover and tomato sauce and lowfat milk. Simmer 20 min, gradually add in cornmeal. Stir as it thickens. Remove from heat. Add in olives. Bake in 3 qt casserole at 325 degrees for 40 min.

    I use beef bouillon rather than salt. I add cayenne pepper, to taste. I add cumin, about 1 teaspoon. I add cheddar cheese on top and melt the last five minutes in the oven. Am considering adding some black beans. Has anyone tried add ins?
