Directions

  1. Saute in 5 or 10 pound batches.
  2. In tilt skillet, heat oil and margarine (50/50 mix). Add cubed sweet potatoes and cook on medium-high heat until slightly brown.
  3. Salt and pepper to taste.
  4. Splash each 5lb batch with 1 cup of maple syrup (if available).
  5. Note: no cinnamon, nutmeg, or ginger please, just salt and pepper.
