Directions

  1. Cut the zucchini in half length wise and scrape the insides into a bowl
  2. Cook the bacon bits.
  3. Add the onions and cook until tender.
  4. Add in zucchini innards.
  5. Stir in tomato.
  6. Take the mixture and fill the zucchini halves.
  7. Cover in cheese.
  8. Bake at 400 for about 20 minutes.
  9. Broil for about 3 minutes to brown and bubble the cheese.
