I'd never had farro before, but it was delicious and hearty. A great substitute to rice.
Ingredients
- 1 cup farro
- 1 cup or so snow peas cut into pieces
- 1/3 cup mint, chopped
- 1/3 cup almonds, toasted and chopped
- 1 teaspoon lemon zest
- 1 tablespoon plus 1 tsp fresh lemon juice
- 1 tablespoon extra-virgin olive oil
- 2 ounce goat cheese, crumbled (I ended up using garlic and herb goat cheese I got at the store and it was delicious)
Directions
- Cook the farro in 2 cups water until tender. Drain excess water if needed.
- Cool completely.
- As the farro is cooking heat another pot of salted water and blanch the snow peas for about 30 seconds, until they're bright green.
- Drain and run under cold water to stop the cooking.
- Chop into pieces.
- Combine all the ingredients into the cooled farro and serve with crumbled goat cheese over top.
