I grew up having these little salmon and cucumber sandwichs... which were always nice. Finally decided to try a version more to my liking. Alaska Wild Salmon, with red onion, cucumber, chili pepper, and in place of mayo is my favourite caesar dressing.
Simple, and easy. Good for crackers , toast, sandwichs or anything else you want to spread this on.
Ingredients
- 1 can 418G Wild Red Pacific Salmon ( Or whatever you have )
- 2 small/medium red onions
- 1/2 English cucumber
- Renee's Mighty Caesar Salad Dressing ( If not using this one, Id add a clove or two of chopped garlic to the mix)
- 1 red chili pepper
- 1 Teaspoon of chili powder
- Freshly Cracked Black Pepper
- a mixing bowl
Directions
- Finely chop the Onions, cucumber and chili( I left the seeds in, optional) and add to the bowl
- Open the can of salmon , pour contents into the bowl, roughly mix
- add 3 to 4 table spoons of Caesar salad dressing
- Freshly cracked pepper to your liking
- Give this good stir , and put in the fridge for 30 minutes to let the flavours mingle
