Directions

  1. Drain peaches and reserve 1 1/3 c. of juice. Grease 9x13 x1 1/2-inch cake pan with the margarine. Spread peaches proportionately over bottom of cake pan. Fold in separate bowl brown sugar, cinnamon and nutmeg. Sprinkle brown sugar mix over peaches. In mixing bowl, mix spiced cake mix, Large eggs, vegetable oil and reserved peach juice for 2 min at medium speed. Pour cake batter over peaches in pan. Bake for 35 to 40 min at 350 degrees or possibly till toothpick comes out of center clean. Immediately invert onto cookie sheet or possibly serving plate.
  2. Bonnie Says: This is an easy cake to fix the night before and take to work for those potluck dinners. I developed this recipe late one night when I needed something to take for a potluck dinner at work the next day and didn't want to run to the store.
