Spanish tortilla Recipe

It's Spanish food and is very good:)

Ingredients

  • 12 eggs
  • 20 new potatoes, cooked and sliced in ½
  • Small handful of wild rocket leaves, roughly chopped
  • 100g sliced charcuterie (prepared meat eg. ham or salami)
  • 1 small chorizo, cooked, peeled and sliced
  • 300ml single cream
  • Pinch of salt and pepper, to season
  • Few drops Tabasco
  • You'll also need:
  • Deep oven-proof frying pan

Directions

  1. Preheat the oven to 160˚C/325˚F/gas 3.
  2. Mix the eggs, Tabasco, salt, pepper and cream together in a large bowl.
  3. Add the new potatoes to the bowl, along with the rocket, sliced charcuterie and chorizo.
  4. Prepare the deep oven-proof pan by heating it, then place a knob of butter in it and wipe it around the pan until melted.
  5. Pour in the tortilla mixture, cook on a moderate heat for 8-10 mins (no stirring) until it starts to come away from the sides of the pan.
  6. Place the pan in the preheated oven for 10 min.
  7. Test to see whether it’s cooked through by poking it with a metal skewer. The skewer should come out clean if it's cook.
  8. Carefully remove the pan from the oven and turn the tortilla out onto a plate. Slice it and eat hot or cold.
